Puri Saren Agung sits right in the centre of Ubud, across the road from the market. It was built in the early 19th century, under Tjokorda Putu Kandel, and rebuilt after the 1917 earthquake; many of its stone carvings are by the artist I Gusti Nyoman Lempad. By day the outer courtyards are free to walk into (the inner ones are still the royal family's home) and half an hour is enough. At night the main courtyard becomes a stage: dance with a gamelan orchestra at 19:30 (Legong, Barong or the Ramayana depending on the day, around 100,000 IDR). Seats aren't numbered, so come early. Go first thing in the morning to beat the tour groups. Modest clothes; no sarong needed.
